Fresh Herb & Citrus Salad

PETIT-TAKETT

This salad is simple and fresh and can be made with any variety of lettuce.  We often eat this salad on top of basmati rice sautéed with onions, carrots, petit peas, and dill.  It reminds me of Israel.  Since leaving Israel as a teenager, I have changed my eating habits entirely.  When I lived with Hana & Shimon every meal was amazing but often heavy and greasy.  Iʼve become notorious for turning down meals that I know I will regret later.  Now when I go to one of my aunties’ houses for lunch they make me a version of this salad.

Ingredients:
1 head of living lettuce or butter leaf roughly chopped
1 cup Persian cucumbers – thinly sliced in rounds
1 tbs flat leaf parsley – finely chopped
1tbs cilantro – finely chopped
1 tbs dill – finely chopped
1/4 cup shallots – sliced in thin rounds

Lemon Vinaigrette:
1/4 cup lemon juice
1/4 cup olive oil
salt and pepper to taste

Whisk the vinaigrette together. Then mix all the ingredients together and toss with the vinaigrette. Serves 4
