Jamaica Limeade

At almost every authentic taco joint you will find a variety of agua frescas to accompany your meal. My favorite taco joint at the moment is Guisadoʼs.  There’s a location in Boyle Heights and one in Echo Park.  They make their own tortillas to order and EVERYTHING is amazing.  To drink they offer a variety of agua frescas.  My favorite is their Armando Palmero.  It is 1/ 2 Jamaica, or hibiscus flower, and 1/2 limeade.  It is the perfect combo of sweet and sour and the perfect drink to accompany a taco.  Since I want to drink it all the time I had to come up with my own recipe.

Ingredients:
1/2 cup of dried hibiscus flower
1 cup of lime juice
3/4 cup of sugar
12 cups of water – or 1 qt + 4 cups

Boil with 12 cups of water, 3/4 cup of sugar and hibiscus flower.  Let the mixture come to a boil then strain.  Add the lime juice and stir.  If its too tart for your taste, add more sugar.  I let it cool in the fridge.  Serve over ice with a slice of lime.
