Cooking for vegans can be a challenge, albeit a welcome one. We have several vegan friends so I am always on the look out for new recipes to make for them. I was at my dear friend Naraʼs house last weekend and she made us this vegan ceviche. Vegan ceviche, you say? She simply substituted the fish with chick peas and olives. The results were crazy good! Itʼs amazingly delicious and so surprising, and it looks beautiful. This recipe also falls under the Mexanisian category.
1 can of drained & rinsed chick peas
1 roma tomato chopped
1 serrano chili deseeded cut in 1/2, then sliced very thin
1/2 cup of Manzanilla olives, sliced in rounds
3 tbs chopped cilantro
3 green onions white and light green only- sliced in thin rounds
3 tbs lime juice
1 tbs good olive oil
1 tsp ketchup
salt and pepper to taste
In a bowl combine lime juice and ketchup mix well then add the rest of the ingredients and mix well. Serve with tortilla chips.
