Pauline’s Roasted Potatoes

Ingredients:

4 lbs of mixed colored potatoes
8 large cloves of garlic, roughly chopped in large pieces
1 tbs of coarse sea salt
1.5 tsp coarse black pepper
2 tbs olive oil
1 whole onion, cut in 1/8 segments with skin on
Pre heat oven to 350 degrees

In a glass baking dish or cookie sheet lay out all of the potatoes.  Add all of the oil, salt, pepper and garlic.  Roll the potatoes around so that they are totally coated.  Then nestle the onion slices throughout the potatoes and put it in the oven.  Bake at 350 degrees for an hour or until the potatoes are tender.
